This blend of Cabernet Sauvignon, Cabernet Franc and Merlot says a lot with these three varietals. Relatively dark ruby in color, it presents a nose of a soda fountain cherry cola with a bit of herb & vanilla. These notes are joined in the palate with essences of cedar box, black raspberry, pepper spice & a touch of leather. A Bordeaux blend with cherry predominance due to all three of Greg Allen’s varietal treatments and a nice balance of acid, tannins & wood that finishes with a lingering pleasantness suitable for enjoyable quaffing or pairing with an assortment of dishes.
FOOD PAIRING SUGGESTIONS:
While quite suitable for such as medium to hard cheeses, Spanish chorizos, & Bolognese style lasagna, this rich & supple wine is a perfect companion for most all grilled red meat (especially beef) or game such as venison. Perhaps a Montreal-spiced grilled rib eye steak or filet mignon w/Bordelaise sauce.
