Though certainly not a common blend, this dark ruby jewel has pleasantly surprised all who have enjoyed its rich, aromatic perfume of cherry, spice & wood. It’s immediately approachable as it bursts into the mouth, roundly filling all corners with distinguished layers of both red & dark cherries, red raspberry & black plum with a whisper of blueberries. Accented with touches of leather, wood & brown spices, it maintains an excellent integration of wood, alcohol & acid throughout till sadly disappearing down one’s throat. The tannins are artfully balanced with the wine as a whole.
FOOD PAIRING SUGGESTIONS:
While thoroughly enjoyable by itself, the “Civil Servant” marries well with Italian food, grilled meats, hard cheeses & charcuterie. Being from the Central Coast, it will easily complement Santa Maria style grilled tri-tip or brisket.
